1-2-3 Custard Pie

List of Ingredients
1 9-inch (23 cm) pastry shell, unbaked
1 can (300 mL) Regular or Low Fat Eagle Brand�
1 1/2 cups (375 mL) hot water
� tsp (2 mL) salt
� tsp (2 mL) vanilla extract
3 eggs, well beaten
Nutmeg
Recipe
1. Combine Eagle Brand, water, salt, and vanilla. Add eggs; mix well. Pour into pie shell; sprinkle with nutmeg.
2. In preheated oven 425�F (220�C) bake 10 minutes. Reduce heat to 300�F (150�C) and bake 20 to 25 minutes or until knife inserted near centre comes out clean. Cool to room temperature; Chill.
Notes: Coconut Custard Pie Using 1 1/3 cups (325 mL) flaked coconut, stir 1 cup (250 mL) into custard mixture and toast remaining 1/3 cup (75 mL) to garnish chilled pie
