    Light ‘n Luscious Banana Cream Pie

    List of Ingredients




    1 large banana
    Orange juice
    1 9-inch (23 cm) baked pie crust
    3 tbsp (45 mL) corn starch
    1/4 tsp (1 mL) salt
    1 2/3 cups (400 mL) water
    1 can (300 mL) Regular or Low Fat Eagle Brand®
    3 egg yolks
    2 tbsp (30 mL) butter
    2 tbsp (30 mL) vanilla extract
    2 cups (2 mL) frozen light whipped topping, thawed

    Recipe



    1. Slice banana; dip in orange juice and drain. Arrange slices on bottom of prepared crust.
    2. Dissolve cornstarch and salt in water; whisk in Eagle Brand and egg yolks.
    3. Cook over a medium heat, whisking constantly until thickened and bubbly. Remove from heat; stir in butter and vanilla.
    4. Pour filling over sliced bananas; cool. Cover and chill overnight.
    5. Serve with whipped topping and garnish as desired.
