Scalloped Sweet Potato Pizza

1 tube (10 oz) refrigerated pizza crust
1 medium sweet potato
1 medium onion
2 tsp vegetable oil
1/8 tsp pepper
1 cup preshredded part-skim mozzarella cheese
1 pkg (6 oz) thinly sliced 97%-fat-free ham
1 box (10 oz) frozen chopped kale, thawed and squeezed dry
1/4 cup grated Parmesan cheese
Recipe
1. Heat oven to 425�F. Coat a 151/2 x 101/2-in. jelly-roll pan with nonstick cooking spray. Unroll pizza crust and press evenly over bottom of pan. Bake 5 minutes or just until crust is starting to brown around edges.
2. Meanwhile peel and thinly slice the sweet potato (see Tip) and onion. Place in a medium bowl, add oil and pepper and toss until well coated.
3. Sprinkle 1/2 cup mozzarella cheese over crust. Top with ham, kale and the potato mixture. Sprinkle evenly with remaining 1/2 cup mozzarella and the Parmesan cheese.
4. Bake 15 minutes or until crust is crisp and browned on bottom and potato and onion are tender.
