    Sweet Onion and Goat Cheese Pizza

    Oh-so-sweet Vidalia onions are the kicker in tonight's extra special quick-bake pizza. Serve with mixed greens tossed with a little balsamic vinegar; imported black olives; sliced cantaloupe.

    List of Ingredients




    1 tsp. olive oil
    2 - large sweet onions, such as Vidalia, thinly sliced
    2 tbsp. balsamic vinegar
    1 tsp. chopped fresh thyme or 1/4 tsp. dried
    1 - thin-crust prebaked pizza shell
    3 oz. crumbled goat cheese

    Recipe



    1 Preheat oven to 400 degrees F. Heat olive oil in a heavy-bottomed sauté pan over medium heat. Add onions and cook until soft and beginning to brown, about 10 minutes. Stir in vinegar, thyme, salt and a generous grinding of black pepper. Cook until vinegar evaporates.
    2 Spread onion mixture on pizza shell. Sprinkle with goat cheese.
    3 Bake in hot oven until cheese melts, about 7 minutes.
