    Basmati Rice with Peas

    For yellower rice, add 1/2 teaspoon turmeric along with the cumin.

    List of Ingredients




    2 cups (15 oz/450 g) brown or white basmati rice
    3-4 cups (24-32 fl oz/720-960 ml) water
    1/4 teaspoon sea salt
    1/2 teaspoon ground cumin
    1 - bay leaf
    1 cup (5 oz/150 g) frozen peas

    Recipe



    1 Place rice in a bowl. Add water to cover and let sit for 10 minutes. Drain and rinse.
    2 In a large saucepan, combine rice and water (3 cups/24 fl oz/720 ml for white rice; 4 cups/32 fl oz/960 ml for brown). Stir in salt, cumin and bay leaf. Bring to a boil, reduce heat to low, cover and simmer: cook white rice for 20 minutes, brown rice for 30. Stir in peas and cook for 5 minutes longer.
    3 Remove bay leaf. Fluff rice with a fork and serve hot.
