Cookoo Over Couscous

List of Ingredients
1/2 c. Chopped onion
1 clove garlic(minced)
1 1/2 c. sliced mushrooms
1 c. chopped tomatoes
1/2 tsp. each: oregano, cumin
2 c. chicken broth
1/4 tsp. crushed red pepper(optional)
2 c. couscous
1/4 c. chopped fresh parsley or 2tsp. driedRecipe
Spray a medium saucepan with non-stick spray. Add onions, garlic, and mushrooms. Cook and stir over medium heat untill veg. are tender. about 5min.
Add tomatoes, oregano, and cumin. Cook for 1 more min. Stir in broth and pepper flakes(if used). Bring to boil. Stir in couscous and parsley. Remove from hear. Cover and let stand for 5 minutes. Fluff with fork before serving.
