Dijon Risotto Primavera

1/2 cup shredded carrot
1/2 cup chopped red pepper
1-1/2 cups chopped zucchini
1 clove garlic, minced
1 Tbsp. olive oil
2 cans (14-1/2 oz. each) chicken broth, divided
1-1/2 cups arborio rice, uncooked
1/4 cup GREY POUPON Dijon Mustard
Recipe
COOK and stir carrot, pepper, zucchini and garlic in oil in saucepan on medium heat for 1 minute or until tender-crisp. Add 1 cup broth; bring to boil.
STIR in rice; return to boil. Reduce heat to medium; cook and stir 5 minutes or until liquid is almost absorbed.
ADD remaining chicken broth, 1 cup at a time, cooking 10 minutes or until liquid is absorbed before each addition. Stir in mustard; heat throughly. Serve immediately.
