    List of Ingredients




    1 medium yellow onion, chopped
    2 cloves garlic, minced
    1 Tbsp. olive oil
    1 cup MINUTE Brown Rice, uncooked
    1 can (16 oz.) red kidney beans, drained, rinsed
    1 cup water
    1/2 cup frozen corn
    2 Tbsp. lemon juice
    1 tsp. each chili powder and ground cumin
    1/2 tsp. salt
    1 medium green pepper, chopped

    Recipe



    COOK onions and garlic in hot oil in large saucepan on medium heat 5 minutes or until onions are tender, stirring occasionally.
    ADD all remaining ingredients except green peppers; mix well. Bring to boil. Reduce heat to low; cover. Simmer 5 minutes.
    REMOVE from heat. Stir in green peppers. Let stand, covered, 5 minutes. Stir before serving.




    KRAFT KITCHENS TIPS


    Variation: Prepare as directed, substituting canned black beans for kidney beans and red bell pepper for green pepper.
