Lentil & Rice Pilaf

Serve this change-of-pace side dish with chicken or beef.
In a medium saucepan, sauté 3/4 cup converted white rice and 2 tsp minced garlic in 1 Tbsp olive oil, stirring often, until some rice just begins to turn opaque.
Add 3/4 cup rinsed, sorted lentils, 3 cups water, 1 shredded medium carrot and 3 chicken-broth cubes.
Cover and simmer, stirring occasionally, 18 minutes or until rice and lentils are tender.
Sprinkle each serving with grated Parmesan cheese.
