Moroccan Couscous w/ Mint, Feta & Cukes

List of Ingredients
12 oz couscous (1 box) 350 g
3 cups Vegetable stock 750 ml
1 med Cucumber, peeled, 1 med
seeded and diced
2 med Tomatoes, diced 2 med
10 oz Feta cheese, crumbled 300 g
1 can Chick peas, drained 1 can
1 cup Olives 250 ml
1/2 cup Chopped parsley 125 ml
1/2 cup Chopped mint 125 ml
Dressing:
1/2 cup Olive oil 125 ml
3 tbsp Lemon juice 45 ml
1/2 tsp Ground coriander 2.5 ml
1/4 tsp Ground pepper 1.75 ml
1/4 tsp Curry powder 1.75 mlRecipe
1. Whisk dressing ingredients together in a bowl and
set aside.
2. Place 3 cups of stock in the T-FAL Rice Cooker and
bring to a boil in ‘ON’ position. Add the couscous and
stir. Replace lid and cook until Rice Cooker automatically
switches to ‘KEEP WARM’ position (approximately
5 minutes).
3. Remove couscous. Place in a large serving bowl and fluff
with a fork.
4. Add remaining ingredients and dressing. Stir to blend.
5. Chill. Garnish with fresh mint. Serves 6.505
