Parmesan Cheese Chicken Couscous

List of Ingredients
1/4 c olive oil
2 lb. boneless, skinless chicken breasts, cut into 1-inch chunks
4 large carrots, peeled and sliced
2 medium onions, diced
2 13 3/4-ounce cans of chicken broth
2 c Parmesan Cheese Whole Wheat Couscous with Milled Flax Seed & Soy
2 tsp hot or mild sauce
1 c raisins
1 c silvered almonds, toasted
Recipe
In 12-inch skillet over medium-high heat, in hot oil, cook chicken until well browned on all sides. With slotted spoon, remove chicken to plate. Reduce heat to medium. Cook carrots and onions for 5 minutes in drippings remaining in skillet.
Add chicken broth, Couscous and Parmesan Cheese seasoning packet, sauce, salt and cooked chicken. Heat to boiling, then reduce heat to low, cover and simmer 5 minutes. Stir in raisins and almonds.
Makes 8 servings.
