    2 bags (8 oz each) Tuscany lettuce blend
    (romaine lettuce, curly endive, carrots, frisée, radicchio; see Tip)
    1 jar (12 oz) roasted red peppers, drained
    and cut in 1-in.-wide strips
    1 jar (12 oz) marinated artichoke hearts, not drained

    Nice to have:
    Olives

    Recipe



    1. Place lettuce in a large salad bowl.

    3. Top with roasted peppers and artichoke hearts, and drizzle marinade from jar over all.

    2. Add olives; toss to mix and coat.

    Per serving: 85 cal, 2 g pro, 12 g car, 4 g fiber, 4 g fat (1 g saturated fat), 0 mg chol, 379 mg sod

    Tip
    Other similar salad blends may be substituted.
