    Fresh Corn and Goat Cheese Salad

    List of Ingredients





    4 piece corn on the cob
    3 medium scallion(s), two diced and one chopped
    1/4 cup sweet red pepper(s), diced
    2/3 oz soft-type goat cheese, about 2 tbsp
    2 Tbsp fresh lemon juice
    1/8 tsp table salt, or to taste
    1/8 tsp black pepper, or to taste


    Recipe



    Steam corn until tender. Cool, then cut kernels from cob. Stir together corn, diced scallions and red pepper.


    Combine chopped scallion, goat cheese and lemon juice in a blender or food processor; process until smooth. Pour over corn mixture and toss well; season to taste with salt and pepper and toss again. Yields about 3/4 cup per serving.
