Gewürztraminer Vinaigrette

750 mL bottle gewürztraminer wine
1/4 cup honey
1 tbsp dijon mustard
1/2 tsp sea salt
1/8 tsp chili flakes
1/2 cup sunflower oil
1 tbsp minced fresh thyme leaves
Zest of 1 lime

In wide, medium pan, bring wine to boil over high heat. Turn heat to medium-high and boil until reduced to 1/2 cup, about 15 minutes. Cool to room temperature.
In medium bowl, whisk together wine reduction, honey, mustard, salt and chili flakes. Slowly whisk in oil until emulsified. Whisk in thyme and zest. Whisk in juice to desired acidity.
Makes about 1 1/2 cups.
