    3 lbs. chopped cooked potatoes
    4 chopped celery ribs
    1 cup chopped red and green bell peppers
    1/3 cup chopped scallions
    1/3 cup chopped red onions
    1/3 cup chopped white onions
    1/4 cup chopped dill pickles
    1/4 cup chopped or sliced black olives
    1 tsp. celery seed
    1 tsp. dill weed
    salt and pepper to taste
    1 tsp. garlic powder
    2 Tbs. dill pickle juice
    Paul's mayonnaise

    Optional: store-bought mayonnaise and/or store-bought mustard

    Boil potatoes in water until just cooked, about 15 to 20 minutes. Test potatoes by piercing them with a fork. Immediately drain potatoes and place them in cold water to stop the cooking process. In a large bowl, combine cooked potatoes, celery ribs, bell peppers, scallions, onions, dill pickles and black olives. Toss gently. Add celery seed, dill weed, salt, pepper and garlic powder. Add dill pickle juice and desired amount of Paul's mayonnaise and mix gently.

    If you prefer more flavor, add store-bought mayonnaise and/or store-bought mustard to the potato salad. Chill in the refrigerator before serving.
