Pear and Watercress Salad

1/4 cup uncooked brown rice, long-grain
1 tsp table salt
3/4 cup 1% low-fat cottage cheese
1/8 tsp cayenne pepper
1 2/3 cup unsweetened canned pears, drained and chopped
2 bunch watercress, trimmed
4 Tbsp fat-free salad dressing, except italian, French recommended
Recipe
Cook rice according to package directions with salt but without added fat; allow to cool.
Mix together cottage cheese, cayenne and pears; stir into rice.
Arrange watercress on a serving dish and place pear mixture in center; chill for 15 minutes before serving with dressing.
