Red Cabbage Coleslaw

List of Ingredients
1 small pot very low-fat plain yogurt, 8 tablespoons required
1 teaspoon lemon(s), rind, finely grated
1/2 small cabbage, shredded
1 medium carrot(s), coarsely grated
4 spring onions, very finely sliced
1 medium apple(s), green, cored and chopped
2 tablespoon lemon(s), juice
1 pinch salt
1 teaspoon pepper, freshly ground black
Recipe
Put the yogurt and lemon rind into a large salad bowl and mix together.
Add the cabbage, carrot, spring onions, apple and lemon juice. Season with salt and pepper and toss together to mix. Cover and chill until ready to serve.
Cook’s tip: For a delicious main course, pile portions of this salad into 4 jacket potatoes and top each one with 50g low fat cottage cheese.
