    Salmon Caesar Salad

    List of Ingredients




    1 10-ounce package Caesar salad (includes lettuce, dressing, croutons, and cheese)*
    1 small yellow, red, or green sweet pepper, cut into thin strips
    1 small cucumber, quartered lengthwise and sliced
    6 ounces smoked, poached, or canned salmon, skinned, boned, and broken into chunks (1 cup)
    1/2 of a lemon, cut into 3 wedges

    Recipe



    1. In a large bowl, combine the lettuce and dressing from the packaged salad, sweet pepper strips, and cucumber; toss gently to coat.
    2. Add salmon, and the croutons and cheese from packaged salad; toss gently to mix. Divide among three dinner plates. Before serving, squeeze juice from a lemon wedge over each salad. Makes 3 servings.
    *Note: If you can't find packaged Caesar salad, substitute 5 cups torn mixed salad greens, 1/3 cup croutons, 3 tablespoons bottled Caesar or ranch salad dressing, and 2 tablespoons grated Parmesan cheese
