Super Salad, Greek Style

Recipe Introduction
You won't break a sweat to prepare this cool, summery main course. Serve with whole-wheat pita, taramasalata or skordalia (available at Greek delis).
List of Ingredients
- - Your favorite low-fat vinaigrette
6 - leaves romaine or other crisp lettuce, sliced
1 - bell pepper (any color), seeded and sliced
1 - cucumber, sliced
1 cup cooked chickpeas
2 oz. crumbled feta, preferably imported
6 - imported black olives, pitted
Recipe
1 Combine lettuce, pepper, cucumber, chickpeas, feta and olives in a salad bowl.
2 Toss with vinaigrette.
3 Enjoy.
