    List of Ingredients




    2 tsp minced garlic
    1/2 cup chopped red onion
    2 tsp chili powder
    1 can (19 oz) red kidney beans, rinsed
    1 pt grape tomatoes, cut in half
    1 bag (10 oz) romaine salad blend
    1 bell pepper, thinly sliced
    1/2 cup reduced-fat Italian dressing mixed with 2 Tbsp fresh lime juice
    3 oz (4 cups) bite-size baked tortilla chips
    1/2 cup shredded 94% fat-free Cheddar cheese

    Recipe



    1. Coat a large nonstick skillet with nonstick cooking spray. Heat over medium heat, add garlic and 1/2 the onion, and cook 2 minutes or until onion is soft. Stir in chili powder, beans and 1/2 the tomatoes. Cook a few minutes to wilt tomatoes.

    2. Toss romaine, bell pepper,
    remaining tomatoes and dressing in a large bowl to mix and coat. Arrange on a platter, top with tortilla chips and spoon bean mixture in center. Sprinkle with cheese and remaining onion.
