Thai Noodle, Chicken & Cabbage Salad

Ramen noodles to the rescue once again. In this recipe, you don’t even have to boil the water.
Dressing:
1/2 cup water
3 Tbsp each vegetable oil and lemon juice
1 Tbsp each sugar, teriyaki sauce and distilled white vinegar
1/4 tsp crushed red pepper
1 pkg (3 oz) Oriental-flavor ramen noodles with seasoning packet
4 cups shredded green cabbage
1 cup each shredded carrots and red bell-pepper strips
2 cups shredded cooked chicken
1/2 cup each chopped cilantro and unsalted peanuts
Garnish:
Chopped jalapeño peppers
Recipe
. Whisk Dressing ingredients in a large bowl. Whisk in seasoning packet from noodles, then crumble in noodles and toss to coat. Add cabbage; toss again. Transfer to a plastic ziptop bag, press out air, seal and refrigerate at least 4 hours for noodles to soften (see Note, above).
2. Remove from bag to a serving bowl. Add rest of ingredients; toss to mix.
