Tomatoes with Basil Vinaigrette

For the vinaigrette:
2 tablespoons red wine vinegar
1/3 cup extra virgin olive oil
1 tablespoon chopped, fresh basil
salt to taste
freshly ground black pepper
For the salad:
3 large ripe, sliced tomatoes, assorted varieties and colors
4 slices red onion
basil leaves for garnish
freshly ground black pepper
Recipe
1. Place all the ingredients in a container with a tight-fitting lid. Shake well.
2. Adjust the salt and pepper to taste.
3. Arrange the tomato and onion slices on 4 serving plates. Sprinkle generously with the vinaigrette. Garnish with basil leaves and a few twists of pepper.
