    steamed or poached and cooled

    Thinly-sliced raw mushrooms
    --------------------------------------------------------------------------------
    Some diced tomato
    Boston or lamb's lettuce
    --------------------------------------------------------------------------------
    Vinaigrette
    --------------------------------------------------------------------------------
    1 part lime
    --------------------------------------------------------------------------------
    2 parts olive oil
    --------------------------------------------------------------------------------
    Sea salt
    --------------------------------------------------------------------------------
    green peppercorns
    --------------------------------------------------------------------------------
    chives

    Recipe



    Method

    Combine all ingredients for the vinaigrette;
    Arrange fish chunks on lettuce (Boston or lamb's lettuce);
    Garnish with raw mushrooms and diced tomato;
