    Thai Cashew Pesto with Chillies

    List of Ingredients




    1 cup cashews, unsalted 250 ml
    2 small green chillies, 2
    seeded
    1 cup canola oil 250 ml
    1 tbsp ginger, peeled 15 ml
    4 garlic cloves 4
    11/2 cups basil leaves 325 ml
    1/4 cup mint leaves 60 ml
    1/4 cup cilantro leaves 60 ml
    1 tsp sugar 5 ml
    3 tbsp lime juice 45 ml
    salt, to taste

    Recipe



    1. Toast cashews in 2 tbsp. (30 ml) of canola oil in a
    skillet over medium heat, until golden brown.
    Place in T-FAL KALEO Food Processor bowl.
    2. Add all remaining ingredients and blend to a rough
    paste. Season to taste.
    3. Serve this pesto with your favourite pasta, rice or
    grilled fish.
