    90g reduced-fat butter
    18 dried apricots, chopped
    ¼ cup currants
    6 dried figs or dates, chopped
    ½ cup soft brown sugar
    2 tbs cocoa powder
    1 egg, lightly beaten
    200g milk arrowroot biscuits, chopped into small pieces
    1 tbs icing sugar

    Recipe



    Line an 18 x 28cm lamington tin with non-stick baking paper. Melt the butter in a saucepan and stir in the apricots, currants, figs or dates, sugar and cocoa powder. Gently heat, while stirring, until the sugar dissolves. Spoon into a large bowl and cool slightly.

    Stir in the egg, then fold in the chopped biscuits. Spoon into the lamington tin and smooth the surface with the back of a spoon. Place in the fridge for 3 hours or until set. (The mixture doesn't set really hard.)

    Cut into 24 squares and dust with sifted icing sugar
