    150g pitted dates
    60g pecans
    1 cup self-raising flour
    ½ tsp bicarbonate of soda
    40g cocoa powder
    ½ cup canned pie apples
    ½ cup buttermilk
    1 tsp vanilla essence
    4 egg whites
    ¼ cup brown sugar

    Recipe



    Preheat oven to 190°C. Coat a 21cm x 28cm shallow cake tin with cooking spray. Line the base of the tin with baking paper.

    Place the dates in a medium bowl and cover with boiling water. Soak for 20 minutes and drain. Place ½ the dates in a separate bowl. Add the pecans and stir to combine. In a separate bowl, sift the flour, soda and cocoa. Set aside.

    Place the remaining dates in a food processor with the apples, buttermilk and vanilla essence. Process until smooth.

    Beat the egg whites until soft peaks form. Gradually beat in the sugar until the sugar dissolves.

    Fold the egg whites into the apple mixture then fold in the cocoa mixture until just combined. Spoon the mix into the prepared tin. Sprinkle with the dates and pecans and press slightly into the mixture. Bake in the oven for 20-25 minutes or until cooked when tested with a skewer. Allow to stand in the tin for 10 minutes before cutting into 24 squares.
