    Serve with a tall stack of warmed corn tortillas and your favorite salsa; Miavita low-fat brownies or other sensible portion of a chocolate indulgence for dessert

    List of Ingredients




    Cilantro leaves, for garnish
    Lime wedges, for garnish
    3 cups low-sodium chicken broth
    1 can (15 oz.) hominy, drained and rinsed
    1 can (10 oz.) tomatoes with green chilies, such as Ro-Tel, drained
    1 cup cooked shredded chicken or turkey meat

    Recipe



    1 Heat chicken broth in a large saucepan over medium heat. Add hominy and tomatoes. Bring to a simmer.
    2 Add chicken and cook to heat through.
    3 Spoon into bowls and float several cilantro leaves on the top. Serve with lime wedges alongside. If you like, offer Mexican hot sauce for those who want to turn up the heat.
