2 egg whites
½ cup sugar
2 cups desiccated coconut
400g good quality dark chocolate, broken into pieces
3 eggs
175 mls milk
280 mls double cream
chocolate shavings and icing sugar
Recipe
Preheat oven to 170°C. In a medium bowl combine egg whites, sugar and desiccated coconut. Grease 8 x 3/4 cup muffin tins and press coconut mixture evenly into bases. Bake for 8- 10 minutes or until golden. Set aside to cool.
Melt chocolate in a bowl over a bain-marie. Whisk egg together in a large bowl. Bring milk and cream to the boil and pour over eggs, whisking gently. Combine with melted chocolate.
Pour into cooled cases and place in the preheated oven. Turn off the oven immediately allow to cook for 30- 40 minutes. Serve with chocolate shavings and icing sugar.
