    whole artichokes, cored and tips clipped
    chicken/beef base
    Seasoned Bread Crumbs (recipe below)
    white wine

    Seasoned Bread Crumbs
    unseasoned dried bread crumbs
    finely chopped garlic
    extra virgin olive oil
    unsalted butter
    chopped parsley
    grated Parmigiano cheese

    Recipe



    Prepare Bread Crumbs: Melt in a heavy sauté pan equal parts of unsalted butter, extra virgin olive oil, and garlic. When hot and garlic not browned, add bread crumbs to pan and begin stirring with wooden spoon. When bread crumbs begin to brown, add Parmigiano and chopped parsley. Season to taste. If crumbs are too dry, add more butter and olive oil.

    Core artichoke with big wooden spoon. Clip the tips of the leaves in a horizontal direction. To stuff artichokes, after crumbs have cooled, spread leaves by hand and stuff each leaf. Place artichoke in shallow, covered pot, with approximately one inch of water and white wine mixture. Cover and simmer for 30 minutes, checking frequently and adding water as needed. If carciofi is ready, leaves should release with a slight tug.
