    Grilling corn in the husk steams the kernels to tenderness. Spiced mayonnaise is a tasty alternative to everyday butter and salt; our suggested variations let you customize the flavours to suit your menu.


    List of Ingredients




    4 Cobs corn
    CHILI-LIME MAYONNAISE:
    1/4 cup (50 mL) Light mayonnaise
    2 tsp (10 mL) Lime juice
    1/2 tsp (2 mL) Chili powder

    Peel back corn husks and remove silk. Fold husks back over corn. Tie ends of husks closed with string. Soak in cold water for 15 minutes; drain. Place on greased grill; close lid and cook, turning occasionally, until husks are blackened and corn is tender, about 15 minutes.

    CHILI-LIME MAYONNASIE:
    Meanwhile, in small bowl, whisk together mayonnaise, lime juice and chili powder.

    Remove husks; brush cobs with mayonnaise.

    Makes 4 servings
