    -8 oz. Goat Cheese
    -1 lb. Raclette Cheese
    -1 cup Yellow Zucchini, sliced
    -1 cup Portobello Mushrooms, sliced
    -1 cup Eggplant, sliced
    -1 cup Red Peppers, sliced
    -1 cup Red Onion, sliced
    -2 tbsp Olive Oil
    -Salt & Pepper

    Recipe



    Toss all vegetables with olive oil, salt and pepper. Grill vegetables and arrange on plates. Melt raclette cheese in trays and pour over vegetables. Serve with pieces of goat cheese on top and enjoy.
    Tips: Replace the Goat cheese with Feta or grated Reggiano Parmesan cheese
