Marinated eggplant

2 regular eggplants
2 tablespoons cooking salt
� cup olive oil
1 clove garlic, crushed
1 small onion, finely chopped
1 tablespoon red wine vinegar
� cup oregano leaves
Salt and freshly ground black pepper
Recipe
Slice eggplant, place in colander and sprinkle with salt; stand 30 minutes. Wash with water and pat dry. Heat a large frypan with 1 tablespoon of the oil and fry eggplant in batches until golden and tender, repeat until all eggplant is cooked.
Combine remaining oil, garlic, onion, vinegar and oregano in a large bowl. Add cooked eggplant and toss to combine; season to taste.
