Mediterranean Roasted Green Beans

Recipe Introduction
The flavor of the roasted green beans is accented by the roasted red peppers and pine nuts.
List of Ingredients
/4 pound green beans, trimmed
1 - red bell pepper, large, cored, seeded and cut into long, thin strips
1 tablespoon olive oil
- - salt & freshly ground black pepper to taste
1 tablespoon pine nuts, toasted
Recipe
1 Preheat oven to 450 degrees F (230 degrees C). Place green beans and peppers on a baking sheet with sides and toss with oil and salt and pepper. Spread the vegetables in an even layer. Roast for about 12 minutes, stirring midway, or until the vegetables are wrinkled, brown and tender.
2 Serve hot or at room temperature, sprinkled with pine nuts.
