    1 tablespoon olive oil
    1 small Vidalia onion, halved and sliced
    4 small yellow summer squash, sliced
    4 small zucchini, sliced
    1 clove garlic, minced
    1 pint assorted colored cherry tomatoes, halved
    1 tablespoon chopped fresh basil
    salt to taste
    freshly ground black pepper
    2 tablespoons freshly ground Parmesan cheese




    Recipe



    1. Heat the olive oil in a nonstick skillet over medium-high heat. Add the onion slices and cook until the edges begin to wilt, about 2 minutes.

    2. Add the summer squash and zucchini and cook until the vegetables begin to turn golden brown, about 5 minutes. Add the garlic and cook for 1 more minute.

    3. Add the tomatoes and season with basil, salt and pepper. Continue cooking until the tomatoes soften, about 2 minutes.

    4. Sprinkle with Parmesan cheese and serve.
