Zucchini Sauté with Oregano and Walnuts

2 teaspoons olive oil
1 teaspoon crushed garlic
4 cups zucchini sliced in 1/2 inch circles
- - salt to taste
- - freshly ground black pepper
1 tablespoon freshly chopped oregano
2 teaspoons chopped, toasted walnuts
Recipe
1 Heat the olive oil in a 10" skillet over medium-low heat.
2 Add the garlic and cook for 1 minute.
3 Add the zucchini slices, salt, pepper, oregano and sauté with the olive oil and garlic until the zucchini turns bright green and becomes tender, about 3 to 5 minutes. Remove from the skillet, sprinkle with toasted walnuts and serve.
