    Apricot-Almond Chicken

    List of Ingredients




    1 orange
    2 Tbsp flour mixed with 3/4 tsp ground cinnamon and 1/4 tsp each salt and pepper
    12 oz chicken tenders
    2 tsp canola oil
    1 small red onion, chopped
    1 can (14 1/2 oz) fat-free, reduced-sodium chicken broth
    1 cup dried apricots
    2 Tbsp apricot preserves
    1/2 cup toasted almonds


    Accompaniments: 2 lb fresh spinach and 1 lb cut-up red-skinned potatoes, both steamed

    Recipe



    1. Grate 1 tsp peel and squeeze 1/4 cup juice from orange. Put flour mixture in a bag, add chicken and toss to coat.

    2. Heat oil in a medium nonstick skillet. Add chicken and onion; cook until browned and chicken is cooked through. Remove chicken to a plate.

    3. Add remaining ingredients except almonds, spinach and potatoes. Cover and simmer 10 minutes until apricots are soft. Return chicken; heat through. Sprinkle with almonds. Serve with spinach and potatoes
