    Curry Pineapple and Pepper Chicken

    3/4 pound boneless chicken breast
    3 tsp curry powder
    2 tsp canola oil
    2 cloves garlic, minced
    2 tsp ginger root, grated
    1 large green pepper, strips
    1 8 oz can pineapple chunks in juice
    2 Tbsp honey
    1/2 tsp salt

    Recipe



    In a large bowl combine chicken (cut into strips)and curry.
    Heat 1 tsp. oil in wok, add ginger and garlic and add to oil, cook for 30 seconds.
    Add green pepper strips, cook until tender. Transfer to plate.
    Add another tsp. oil and add chicken. Cook until beginning to brown. Add pineapple and juice and honey.
    Cook 2 minutes.
    Add green peppers and salt, cook until chicken is done.
    Serve over rice.
