    List of Ingredients






    In a large bowl, add ingredients in order and beat until smooth:
    2 eggs, beaten
    2 cups buttermilk
    1/4 cup oil
    2 cups flour
    2 Tbs. sugar
    2 tsp. baking powder
    1 tsp. salt
    1 tsp. baking soda


    Yield: ~20 Pancakes

    Notes: To make "buttermilk", put 2 Tbs. vinegar in 2 cup measuring cup. Pour in enough milk to make 2 cups. Microwave for 1 minute. Stir. You'll notice that it's slightly thickened. If you let the batter sit before making pancakes, it will thicken and make fluffier pancakes. Pour batter from 1/4 cup measuring cup to make nice round pancakes.
