    Chewy Peanut Bars

    CRUST

    Measure into bowl:
    1 cup flour
    ½ cup brown sugar
    Cut in until it resembles coarse crumbs:
    ½ cup margarine

    Spread evenly in greased 13x9” pan.

    Bake at 375°F. for 8-10 minutes or until crust appears slightly firm in center. Cool.


    TOPPING

    Mix until smooth:
    1 cup brown sugar
    2 eggs
    Stir in until well mixed:
    3 Tbs. flour
    1 tsp. baking powder
    1 tsp. vanilla
    Stir in:
    2 cups salted, blanched peanuts

    Pour over cooled crust.

    Bake at 375°F. for 18-20 minutes or until browned and edges are firm (center may be somewhat soft but crusted over).

    Cool and cut into bars. Store in airtight container and will keep for one week.

    Yield: 36 bars
