    In large bowl, mix:
    2 cups flour
    1 cup sugar
    1 tsp. baking powder
    ¼ tsp. salt
    Pinch cinnamon

    Cut in until fine crumbs:
    ¼ cup cold margarine

    Add and stir until evenly moistened:
    1 cup mini chips
    1 cup walnuts, toasted and coarsely chopped
    1 tsp. vanilla
    3 large eggs, lightly beaten (remove 1 Tbs. and set aside)

    With hand, knead mixture a few times in the bowl until dough forms.
    Between sheets of plastic wrap, shape into 9x8” log.
    Cut into 9x4” and flip onto parchment. Place 4” apart. With pastry brush, brush tops and sides of logs with reserved egg.

    Bake at 325°F. for 25 minutes. Cool on rack for 10 minutes.

    Place one log on cutting board. Cut with serrated knife crosswise into 1/2” diagonal slices. Place slices upright, ¼” apart on sheet. Repeat with remaining logs.

    Bake slices at 400°F. for 8 minutes on each side to allow biscotti to dry out. Cool completely on racks. They will harden as they cool.

    Store tightly covered.

    Yield: 21 nice ones.

    Notes: 12/02 -- Didn’t slice on diagonal and got more slices.
    Brushed with milk to cover booboo of using all the eggs.
