Salted Peanut Crisps

In a large mixing bowl, cream together:
1-1/2 cups brown sugar
½ cup margarine, softened
½ cup shortening
Add in and combine well:
2 eggs
2 tsp. vanilla
In a separate bowl, combine well:
3 cups flour
1 tsp. salt
½ tsp. baking soda
¼ tsp. baking powder
Add dry ingredients to brown sugar/margarine mixture and combine well.
Stir in:
2 cups salted peanuts (or substitute chocolate chips)
Drop by rounded teaspoonfuls 2” apart on lightly greased sheet.
Bake at 375°F. for 8-10 minutes until golden brown. Cool on racks or paper towels.
Yield: 3 dozen
Notes: Use parchment paper. Finger flatten before baking. Medium scoop yields 3.5 dozen (12/sheet). Double recipe yielded 3 dozen (3-1/2”) from stainless serving spoon. 375°F. for 14 minutes. Double recipe also yields 72 cookies with medium scoop.
