Vanilla Sugar Cookies

Beat together until creamy:
¾ cup shortening
½ cup brown sugar
¾ cup sugar
Add and mix thoroughly:
1 egg
1 tsp. vanilla
Combine and stir into creamed mixture:
2 cups flour
½ tsp. baking soda
¼ tsp. salt
pinch of Cream of Tartar
Drop by 1” scoop onto parchment. Optional: roll tops in colored sprinkles or chocolate shot.
Bake at 350°F. for 10 minutes.
Yield: 3 dozen
Notes: 9/05 -- Could probably fit 12/sheet. Original recipe called for ¼ cup shortening, but mixture wouldn’t cream; 1 cup sugar but they were too sweet; ¼ tsp. vanilla (not enough). They look nice. Crispy edges and softer insides.
