Beef with Snow Peas

Combine marinade:
1 Tbs. rice wine or dry sherry
½ tsp. minced ginger
2 Tbs. shoyu
¼ tsp. sugar
1 tsp. cornstarch
2 Tbs. vegetable oil
½ tsp. baking soda
Add and marinate for 30 minutes:
2/3 pound flank steak, sliced
Combine and mix well:
¼ cup chicken broth
½ tsp. cornstarch
2 Tbs. water
1 Tbs. shoyu
¼ tsp. sugar
¼ tsp. salt
1 tsp. sesame oil
Blanch ½ pound snow peas for 10 seconds in boiling water. Plunge into 2 cups cold water and drain well.
Stir fry 10 seconds, until lightly browned:
2 Tbs. oil
1 clove garlic, crushed
Remove garlic.
Stir fry 10 seconds:
snow peas
¼ tsp. salt
Remove to platter.
Stir fry marinated beef then add seasoning sauce and stir until thickened. Spoon over peas.
Notes: Good flavor. Don’t double sauce mixture even if you double the snow peas. It makes too much sauce. For veggie version, eliminate flank and substitute tofu (browned) and add mushrooms and water chestnuts.
