Enchilada Casserole

Brown and drain:
1 pound ground beef
1 medium chopped onion
Add:
1 tsp. salt
1/4 tsp. pepper
1 Tbs. chili powder
8 oz. tomato sauce
Canned corn, drained
Canned black beans, rinsed and drained
Alternate layers of corn tortillas, meat and shredded cheddar cheese.
Pour 1 cup of water over all.
Cover and bake at 350°F. for 1/2 an hour.
Notes: Can substitute cooked chicken, but sauté onions alone first.
