Royal Chicken on Emerald Threads

Rub on:
2 tsp. Mirin
4 small chicken breasts, boneless, skinless
Season with salt and pepper
Shake in:
¼ cup flour
¼ cup cornstarch
Cook in 3 Tbs. oil over medium heat until brown and tender, about 15 minutes.
Set aside and slice.
Sauté in 1 Tbs. oil:
3 cups shredded cabbage
¼ cup sliced onion
Spread chicken over cabbage.
Spoon over sauce:
1 Tbs. each

sesame oil
vinegar
shoyu
sugar
