    Stir Fried Chicken and Zucchini

    Stir fry:
    2 Tbs. oil
    1 cup diced chicken breast
    1 clove garlic, minced

    Add when chicken is white, stir in:
    2 Tbs. shoyu

    Add and cover, cook a few minutes:
    ½ cup sliced bamboo shoots
    ¼ cup canned mushroom slices
    1-1/2 cups diced zucchini

    Add and stir for 1 minute:
    1 Tbs. cornstarch + ¼ cup water

    Garnish with toasted slivered almonds

    Yield: 4 servings

    Notes: 2/84—Used water chestnuts too and cut zucchini in matchsticks, not cubes. Increase seasoning with chicken bouillion cube and granulated garlic.
