Garlic & Lime Chicken

Combine in Zip-Loc bag:
¼ cup fresh lime juice (3-4 limes)
¼ cup olive oil
8-10 garlic cloves, minced
Salt and pepper to taste
Add 8 chicken breasts (I used 5 deboned)
Marinate for 2-24 hours.
Drain meat and arrange in 13x9” pan, skin side up.
Season again with salt and pepper.
Roast in 400°F. in upper third of oven for 20 minutes, or until done .
Broil for 2 minutes.
Notes: 6/04 RY: “Trendy”. Had good flavor and was tender. Sliced and made a good sandwich the next day.
