    PORCUPINE MEATBALLS


    Mix together:
    1# ground beef
    1/2 cup uncooked rice
    1/2 cup water
    1/3 cup chopped onion
    1 tsp. salt
    1/8 tsp. garlic powder
    1/8 tsp. pepper

    Shape into meatballs (ping-pong ball size) and brown in skillet (this cooked out lots of the fat).

    Drain and remove to 8x8" pan.

    Stir together and pour over meatballs:
    2-8oz. cans of tomato sauce
    1 cup water
    2 tsp. worcestershire sauce

    Cover with foil and bake at 350°F. for 40-45 minutes. Uncover and continue cooking for additional 10 minutes. If the meatballs are too big, the rice doesn’t cook.
