In large pot over medium heat, sauté
2 Tbs. olive oil
2 large potatoes, pared and cubed
4 carrots, chopped
4 stalks celery, chopped
1 onion, chopped
3 cloves garlic, minced
Mix in and bring to boil:
1-6 oz. can tomato paste
1-15 oz. can kidney beans, drained
1 can canellini beans, drained
1-14 oz. can beef broth
1-1/2 quarts water
1-1/2 Tbs. dried basil
1 Tbs. oregano
1-1/2 tsp. salt
2 beef bouillion cubes
¼ tsp. pepper
¼ tsp. Italian seasoning
Reduce to simmer and add:
2 chopped zucchini
1 small package shell macaroni
Towards the end add:
½ bunch of spinach leaves
