Split Pea Soup

Soak over night:
1-16 oz. bag of dried split peas
Cook 1-1/2 hours:
2 Qts. water
1 ham bone
Strain and refrigerate broth overnight to defat.
In broth, add and bring to boil:
2 more quarts of water
2 small onions, thinly sliced
½ tsp. salt
¼ tsp. pepper
drained peas
Simmer for 1-1/2 hours, stirring regularly.
In three batches, puree soup in food processor. Pour into a new pot.
Add to soup:
3 stalks of celery, chopped
3-4 carrots, chopped
Bring to boil then simmer uncovered for 30-40 minutes until tender.
Stir periodically.
Toss in:
Cut up ham
1/8 tsp. or less hickory smoked salt
